What’s your favorite Disney restaurant? It’s so hard for my to decide, but inevitably my tastes lean towards something in the Animal Kingdom area. The Animal Kingdom Lodge has all fantastic options with Jiko, Sanaa, and Boma. Then Animal Kingdom itself, while not having many places, does have Tusker House and Yak and Yeti. I’m also excited to try the new addition of Tiffins! So when I saw the cookbook “A Cooking Safari with Mickey” I knew I had to buy it.
This Disney cookbook has all recipes from either Animal Kingdom Lodge of Animal Kingdom theme park restaurants. My husband loves this type of cuisine as well so I knew it would be perfect for us. How cool that we could make some of these delicious meals at home?
The first one I decided to tackle was the Peri Peri salmon recipe from Tusker House. We love seafood and it’s one of the more simple recipes in the book. I was a little nervous about how it would come out – would it be too spicy? Not enough flavor? But it was actually pretty perfect. We loved this one and can’t wait to make it again! I’d make it sooner but we want to try out some other recipes from the book 😉
Ingredients
- 1/4 cup sambal chili sauce (can be found in specialty sections or online)
- 1 tablespoon olive oil
- 1 tablespoon paprika
- 1 teaspoon Old Bay seasoning
- 1 teaspoon Italian seasoning
- 1/2 teaspoon coarse salt
- 1/4 teaspoon freshly ground black pepper
- 4 salmon filets
For the spicy tomato topping:
- 1 large tomato, diced
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons sambal chili sauce
- 2 tablespoons fresh basil, chopped
- 1/2 teaspoon coarse salt
- 1/4 teaspoon freshly ground black pepper
When I went to our grocery store, Wegmans, I could only find sambal chili paste and not sauce – however, I’m pretty sure it’s the same thing. At the very least I used the same proportions and everything tasted good, so if you’ve got chili paste instead you should be okay!
Directions:
- Whisk together sambal, oil, paprika, Old bay, Italian seasoning, salt,and pepper in a small bowl.
- Coat salmon with the mixture and place in container in fridge to marinate for at least 2 hours.
- Preheat oven to 350 degrees. Heat oil mixture in a large nonstick skillet over high heat. Sear salmon in skillet until golden, about 2 minutes. Flip, then place skillet in the oven and cook for 3-5 more minutes or until fish is cooked through.
For spicy tomato topping:
- Combine all ingredients in a small bowl.
- Spoon over salmon, serve, and enjoy!

I pinned this this morning because it looks AMAZING (right after I ran to check my “cooking with Mickey and the Disney Chefs” cookbook to make sure it wasn’t in there… it wasn’t though a LOT of the Animal Kingdom lodge faves are!)
