Can margarita Monday be thing? Today will be my first day back at work in a over two months so I very well might need one when I get home tonight! I’ve been experimenting with lots of different margaritas. La Cava del Tequila from the Epcot Mexico pavilion had been sharing recipes on their instagram, but there were some on the menu that I wanted to try that they didn’t share (or if they did, I missed it) – like this minty pineapple margarita recipe.
This is the first time I really created the recipe just based on the menu description, without any real guidance on the amounts or proportions of the ingredients. And it turned out pretty well! I guess all of the other maragaritas I’ve been making have given me some good practice and insight.
Anything pineapple sounds great right now since we’re getting into summer. And mint is the perfect way to balance out the sweetness of pineapple. The description for this recipe includes “mint cordial,” which is more or less just a mint flavored simple syrup. I used this recipe to make my own mint cordial because it was the simplest one I found, and it worked quite well.
The only thing I didn’t actually have was the particular salt they used for the rim, which is black ant salt. That one is just a little too unusual for me, though I guess I could have tried to recreate it with ants from the backyard… anyway, any kind of salt will do. I actually had a black volcano salt a friend brought us from Iceland so I ended up using that just for something a little different and to keep the same visual of the dark salt.
Ingredients:
- 1.5 oz tequila
- 2 oz pineapple juice
- 1 oz mint cordial
- .5 oz lime juice
- splash of grenadine
Directions: Add all ingredients except grenadine to a shaker with ice, shake well and pour into glass. Top with just a splash of grenadine. Enjoy!

I can’t drink so I’d have to tweak this recipe slightly, but I am really intrigued by the combination of pineapple and mint! I love both flavours, but I’ve never tried them together before! I might have to sometime in the future though.
