Disney’s spaghetti and meatball cupcake recipe from Mama Melrose

Want to make something fun (and surprisingly simple) for Valentine’s Day dessert this year? The spaghetti and meatball cupcake on the kid’s dessert menu at Mama Melrose in Hollywood Studios is super fun and all ages can enjoy it at home.

Spaghetti and meatballs has become a romantic dish thanks to Lady and the Tramp, but it’s even more sweet as a cupcake! It looks super cute and tastes delicious too. One of the things I really appreciated about this one was that it wasn’t too difficult to make it look good. I’m not a food artist but it’s okay if spaghetti is a little messy!

A few notes about my version of the spaghetti and meatball cupcake recipe:

  • You can start with any chocolate cupcake recipe you like as the base. I personally just used a boxed cupcake mix – I knew I’d be spending a little time on the decorations so I figured I’d make it more simple for the baking part!
  • I bought a pre-made buttercream frosting as well but I added some slight yellow food coloring to make it look more like pasta. Start small – you can always add more if necessary  but you can’t remove coloring once you add it.
  • For the meatballs I actually tried two different techniques – I used a few extra cupcakes to sculpt some mini cake balls, and I used Lindt truffles on top. I was afraid the truffles would look too round and perfect, but I found that once you added the “parmesan” white chocolate on top you couldn’t really tell that much and the truffles were easier.
  • Freeze your white chocolate before grating – it’s so much easier that way.

Helpful kitchen tools for this spaghetti and meatball cupcake recipe:

Microplane Grater. This handheld crater is one of the best tools you can find to easily grate smaller things in the kitchen – I use mine all the time, but for this recipe it’s useful for grating the white chocolate.
Piping tips. For decorating cupcakes I like to have a variety of piping tips available – for this one you need a pretty thin round (in the Wilton set I use tip #8).
Rubber spatula. This is a must have for baking now. We have about 3 of them because I use them so much! It makes moving batter around so much easier.
Apron. I don’t know about you but I am not the neatest baker – for a project like this an apron is a must! Bonus points if it’s Disney.

Yield: 24 cupcakes

Spaghetti and meatball cupcake recipe

A cute spaghetti and meatball inspired cupcake that's easy to make and fun for all ages!

Ingredients

  • Prepared chocolate cupcakes (24)
  • Buttercream frosting
  • Chocolate truffles (24)
  • White chocolate
  • 1/4 cup granulated sugar
  • 1 1/2 tsp cornstarch
  • 1/4 cup water
  • 2/3 cup raspberries
  • 1 1/2 tsp lemon juice

Instructions

  1. Bake or prepare your chocolate cupcakes according to instructions. Allow to cool before decorating.
  2. Make the raspberry sauce - Combine sugar and corn starch in a pan on the stove over medium heat. Gradually stir in the water until smooth. Add berries and lemon juice. Bring to a boil, then reduce heat to low and simmer, uncovered, until slightly thickened. Mash the berries until you have a thick sauce and strain to get rid of seeds. Allow to cool.
  3. Add yellow food coloring to buttercream frosting until desired color is achieved.
  4. Pipe frosting with a thin tip onto cupcakes to look like spaghetti.
  5. Top each cupcake with a chocolate truffle.
  6. Pour the raspberry sauce you made over the cupcakes to look like spaghetti sauce.
  7. Grate white chocolate over top and enjoy!

    These are so cute! I am not sure why, but I have always loved sweets and desserts that look like other foods. I would definitely enjoy these while watching Lady and the Tramp!

    These are so convincing! I love how they’re inspired by Lady and the Tramp. Such a fun movie. I’m especially eyeing that chocolate truffle and raspberry sauce. Yum!

      The raspberry sauce was so good! I actually used it for some other things too, including putting it into chocolate ice cream 🙂
