Welcome to this month’s Blogorail Teal loop. Today we are sharing some yummy holiday treats.
I’m pretty sure it’s a rule that anything which is Mickey shaped automatically tastes better. And while gingerbread cookies are pretty delicious as it is, they are even better with a little Disney magic! Even when I won’t be traveling to Disney for the holidays, I love to sneak in a little Disney anywhere I can – whether it’s on my tree, around the house, or with my cookies!
Christmas cookies are kind of my “thing.” I’m not really sure how it started, but one year I got really into baking and it’s stuck ever since. I usually make 5-6 kinds of cookies and have certain ones I have to make every year because people request them. By the time Christmas rolls around, I’ve made literally hundreds of cookies. But one kind I haven’t made in awhile is gingerbread, so I decided to give it a go this year – with a Disney twist, of course!
The recipe I used for these gingerbread men was from the Food Network magazine, and you can find it here. It’s a good recipe and they taste great, but I found the dough just slightly crumbly to work with. If you have a go-to recipe for gingerbread I’d use that! I always use Alton Brown’s recipe for Royal Icing.
But the real fun in gingerbread cookies is decorating them! I actually used a regular gingerbread man cookie cutter to cut them out, and then just made round ears and attached them. You can get a Mickey gingerbread cookie cutter a couple of places online, but they’re not super easy to come by. I also did some Mickey snowmen in the same way.
I created the icing in three different colors – white, red, and green. I gave the Mickeys scarves, buttons, and some of them got faces (I’m always on the fence about faces on gingerbread – I’m not great at it and sometimes they just end up looking creepy!). I experimented with different patterns and colors and I like how they came out! That’s the great part about these Mickey gingerbread cookies – there are so many different ways you can choose to decorate them.
And they really do taste delicious. It’s going to be hard trying not to eat them all before the holidays actually come around!
