Sanaa bread service recipe - Disney in your Day

 I won’t lie, one of the best things about Disney World is the food. I often get asked what my favorite restaurant in Disney is, and it’s really hard to decide. They have some amazing signature dining experiences, fun character meals, and lots of good food. But the one place I keep coming back to time and again is Sanaa. So of course I had to take the opportunity to try and recreate it at home with this Sanaa bread service recipe.

I’m an Animal Kingdom lover at heart, so the fact that this restaurant is located at Animal Kingdom Lodge with a view of the savanna and animals outside while you dine wins me over. On top of that, the menu is African/Indian inspired, which happens to be one of my favorite types of cuisine. And the best thing on the menu? The bread service.

This isn’t your typical “rolls and butter” – this a giant plate of naan bread with 9 different dipping sauces. Everything from a cool cucumber based yogurt dip to a sweet mango chutney to spicy garlic or jalapeno based dips. I’ve gone to Sanaa with a group of people and gotten 3 orders of the bread service. I’ve gone to Sanaa by myself and gotten a whole bread service just for me.

Aside from the citrus swirl, it’s probably the one item from Disney that I’ve eaten more than any other, and one of my favorite things. Someone sent me the recipes years ago and I finally got around to trying them and had to share!

I chose to make 4 out of the 9 dips, which I’ve shared here with you. I also did not make my own naan bread because I just don’t have the time for that and you can usually get some at the grocery store which is pretty good!

The recipes are to make large batches, so I halved some of them or even cut them into 1/4’s. This made plenty of dip to serve two of us (and Jason is a big eater! You could probably get away with serving this for 4, especially if it’s as an appetizer or a snack. We just had naan bread and dip for lunch).

Below are the recipes for the 4 dips I tried! These are with the adjustments for smaller portion sizes. Enjoy!

Sanaa’s Jalapeno Lime Pickle dip

  • 1/4 cup canola oil
  • 1/2 shallot, peeled and sliced thin
  • 1.5 tablepoons salt
  • 1/4 tablespoon chili powder
  • 1/2 tablespoon paprika
  • 1/2 tablespoon Madras curry powder
  • 1 teaspoon cayenne powder
  • 1/4 cup sugar
  • 1/4 cup white vinegar
  • 1/2 tablespoon lime zest
  • 2 ounces fresh squeezed lime juice
  • 1/2 cup fresh jalapeno, diced

Heat the canola oil in a sauce pan. Add the shallots and salt and cook until the shallots are soft. Add chili powder, paprika, curry powder, and cayenne. Cook, stirring frequently, until spices are fragrant. Add the sugar, white vinegar, lime juice and lime zest and bring to a boil. Reduce heat to low and cook for approximately 10 minutes. Turn off the heat, add jalapenos, and let steep at room temperature for 30 minutes. Chill in the refrigerator before serving.

Sanaa’s Mango Chutney

  • 1 large mango, peeled and chopped
  • 1/3 of a red bell pepper, chopped
  • 1/2 cup brown sugar
  • 3 ounces white vinegar
  • 1 ounce minced ginger
  • 1/2 tablepoon lemon juice
  • 1 teaspoon madra curry powder
  • 1/4 teaspoon cumin
  • 1/2 teaspoon nutmeg

Combine mango, red pepper, sugar, vinegar, and ginger in a large saucepan. Bring to a boil over high heat, reduce heat, and boil gently, uncovered, for 20 minutes (stirring occasionally). Add lemon juice, curry powder, nutmeg, and salt. Boil gently for 5 more minutes.

Sanaa’s Red Pepper Hummus

  • 2 cups chickpeas, drained
  • 1 red bell pepper, seeded and chopped
  • 1 clove of garlic
  • 1/2 cup tahini
  • 1/2 teaspoon salt
  • 3 tablespoons lemon juice
  • 2.5 tablespoons olive oil
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika

Blend all of the ingredients together in a food processor, stopping occasionally to scrape the sides. Add any remaining chickpea brine until desired consistency is reached.

Sanaa’s Cucumber Raita

  • 1/2 cup plain yogurt
  • 1/3 of a cucumber, diced into small pieces
  • 1/4 of a small jalapeno pepper, seeds and stem removed, minced
  • 1/4 teaspoon cumin
  • 1/8 teaspoon cayenne pepper
  • 1/3 teaspoon salt

Stir all the ingredients together in a large bowl.
