‘Ohana pineapple coconut bread recipe

I’ve been inspired to cook with a lot of tropical flavors lately – this summer has been extra hot here and I love how refreshing cooking with fruit is! So recreating many of the recipes from ‘Ohana is a fun project I’ve been working on. So far I’ve made the honey coriander chicken wings, stir fry noodles, dumplings and dipping sauces, the tropical salad, and now… this ‘Ohana pineapple coconut bread recipe.

In my family, my husband is usually the breadmaker. For many years he would make a loaf of bread at least once a week with the bread machine. Since the quarantine a friend gave us some sourdough starter, and he’s been making loaves of sourdough ever since! So this pineapple coconut bread was probably the first time I’ve ever made bread from scratch myself.

Ohana pineapple coconut bread recipe - Disney in your Day

‘Ohana pineapple coconut bread recipe:

Ingredients:

  • 1 3/4 cups of water
  • 1 egg yolk
  • 2 tablespoons shortening
  • 4 1/2 cups of bread flour (regular flour can be used, but a high gluten flour is preferred)
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 1 tablespoon yeast
  • 1 cup pineapple
  • 1 cup shredded coconut
  • 1/2 cup sugar
  • 2 tablespoons cornstarch

Directions:

  1. Combine pineapple and coconut in a bowl. Combine 1/2 cup sugar and 2 tablespoons cornstarch in a separate bowl. Then add the sugar and cornstarch mixture to the pineapple and coconut and mix well. Refrigerate for 1 hour.
  2. Mix together the water, egg yolk, shortening, bread flour, salt, 1/3 cup sugar, and yeast.
  3. Once well mixed, knead the dough for 5-8 minutes.
  4. Form into a ball and place into a bowl covered with plastic wrap until dough doubles in size, approximately 1 hour.
  5. Once ready, place dough on a floured surface. Roll out until it is about 1 inch thick.
  6. Spread coconut and pineapple mixture evenly over the dough, then fold the dough over on top of itself.
  7. Cut dough into pieces and place into a greased baking pan.
  8. Let the dough rise until it is about halfway up the pan.
  9. Bake at 350 degrees for 25-30 minutes, or until bread is golden brown.

    Oh my this sounds like a fun combo for bread! It’s like a coconut/pineapple upside down cake my mom used to make but in BREAD form! I’ll have to give this a try 🙂
