While I’m not vegetarian, I do find myself often favoring healthy foods. Sometimes this is a conscious choice, and sometimes it’s just my preferences – I happen to love things like fruits, veggies, and hummus! One of the more popular vegetarian meals I’ve heard about in Disney is the Lighthouse Sandwich at Columbia Harbour House. I haven’t actually ordered it there yet, but when I was exploring healthier options it actually sounded quite delicious!
Columbia Harbour House is one of my favorite quick service dining locations in Magic Kingdom. It has some good food and plenty of seating, including an upstairs area that looks out at the Haunted Mansion. They focus a lot on seafood, but this vegetarian entree sounded so tasty I had to try and recreate it myself at home!
There are a couple of adjustments that I had. I couldn’t find olive panini bread so I just used a regular panini bread. You could make your own hummus but I used Trader Joe’s brand. And while the original recipe doesn’t call for toasting the bread, I did choose to do that and was very happy I did so. This sandwich is super easy to put together and makes a great lunch. This is my slightly altered, more simplified version of the Lighthouse sandwich, and I hope you enjoy it as much as I did!
Ingredients:
- Panini Bread
- ¼ cup Hummus
- 1 ½ cups shredded broccoli slaw mix (12 oz. bag in the grocery store)
- ¾ cup of honey dijon dressing (Ken’s Brand)
- Vine ripe tomatoes sliced (2 slices per sandwich)
Instructions:
- Toss together broccoli slaw and honey dijon dressing and set aside.
- Slice bread and toast it if desired.
- Spread bread with hummus, add broccoli slaw and 2 slices of tomato. Enjoy!

Since I’m a Muslim and can’t eat meat at most restaurants as it isn’t killed under Islamic dietary laws (similar to kosher), this is the only place I’ve eaten lunch at Magic Kingdom as they have fish, so fish and chips is my go-to here, lol!

I’ve never eaten at the Columbia Harbour House, but this looks delicious. Sometimes when at the parks, all I want is a light, healthy meal. This sounds like the perfect meal!
I’ve never tried the original but I made this a few weeks ago and it was amazing! I used ciabatta buns & a homemade honey dijon dressing.
