Cucumber margarita recipe - Disney in your Day

A weekly margarita has definitely become a thing for me since I’ve been home! I don’t often have time to make fancy cocktails unless I’m having a party or something, but now I’m taking the time to treat myself to something fun once in awhile. And of course when I can recreate one from La Cava del Tequila, like this cucumber margarita recipe, it’s even better!

La Cava del Tequila has been going live on their instagram with walk-throughs of how to make many of their cocktails using ingredients you might have at home. They aren’t exactly the same as the ones in the parks, but I’ve played around with the recipes and the descriptions on La Cava’s menu to try and replicate them as closely as possible!

This one took a little more work than some of the other margaritas I’ve made from there (the avocado margarita and Black Magic margarita, which is a blackberry one, were both delicious and fairly simple!). For this one I had to puree the cucumber and caramelize the pineapple juice. I also don’t have tajin for the rim, which would add a really nice kick to it. Maybe I’ll have to recreate it sometime when I have that extra element more easily available.

Cucumber margarita recipe - Disney in your Day

Ingredients:

  • 1.5 oz. tequila
  • .5 oz caramelized pineapple juice
  • 2 oz. pureed cucumber
  • .5 oz triple sec
  • 1 oz lime juice
  • .25 oz agave
  • 1-2 basil leaves
  • cucumber slice for garnish

Directions: Caramelize the pineapple juice by boiling it on a stove over medium-high heat down to a syrup. Combine tequila, caramelized pineapple juice, pureed cucumber, triple sec, lime juice, and agave in a shaker. Muddle basil in bottom of margarita class, then pour drink mixture over it. Garnish with a slice of cucumber and a tajin chili rim if available. Serve on the rocks.

    I have never heard of adding cucumber! This looks so tasty…cool idea!

    Sounds like an interesting margarita. I’ve added cucumber to other mixed drinks, but never thought of it for a marg. I’ll have to test this out, but swap for a different fruit, since I’m allergic to pineapple.

    Cucumber margaritas are such a refreshing drink! I love the cooling flavor that cucumber adds without there being a ton of extra sweetness. This one is definitely my favorite from La Cava del Tequila.
