Hands down the best meal we’ve had on a Disney cruise is the brunch at Palo. There is a large appetizer buffet, plated entrees, and then delicious little bite size desserts. I tried to save room to try a number of the desserts! While there were plenty of delicious chocolate treats, one of the highlights for me was actually the champagne jello. Since I liked it so much I figured out my own champagne jello recipe to make at home.
It turns out champagne jello actually isn’t too difficult to make! It’s pretty similar to making regular jello but you use champagne (and a little vodka) instead of water. If you’ve made jello shots before you probably know the drill 😉 To keep the pure champagne flavor you’d probably want to use regular vodka but I used citrus vodka because I have it I thought it might be good with a little lemon flavor (it was).
Of course, the jello on its own might be a little bland or one-note. That’s why at the Palo brunch they also serve the jello bites with fresh berries! That mix of champagne jello, blueberries, and blackberries is pretty delicious. They also had strawberries on the cruise, but I did not have any strawberries on hand – we make do with what we have right now!
If you’re interested in trying it yourself, here’s the instructions for the champagne jello recipe:
Ingredients:
- 1 1/2 cups champagne (divided into 1 1/4 cup and 1/4 cup)
- 1 tbsp lemon juice
- 1/4 cup sugar
- 3 envelopes plain gelatin
- 1/4 cup vodka
- fresh blueberries, blackberries, and/or strawberries
- Mint leaves
Directions:
- Combine 1 1/4 cup champagne, lemon juice, and sugar in a saucepan. Sprinkle all the gelatin on top.
- Let gelatin sit for about 2 minutes, then heat the saucepan over low heat. Stir until gelatin has completely dissolved (this took about 5-6 minutes for me), then remove from heat. Stir in remaining 1/4 cup champagne and vodka.
- Grease a loaf pan, then pour mixture into mold and let chill in refrigerator for at least 2 hours.
- When ready, cut into squares and serve with fresh berries and garnish with mint leaf. Enjoy!
