One of my absolute favorite places to eat at Disney is Animal Kingdom Lodge. They have one quick service location (the Mara), two regular table service restaurants (Sanaa and Boma), and a signature restaurant (Jiko). All have menus that are inspired by the flavors of Africa and India, and I can’t get enough of those rich foods and spices.
The Mara has some really tasty items, but one of the ones we enjoyed a lot was the African Stew. I created my own version at home, with a few adjustments to make it slightly healthier. While the original version has pork, I used shrimp instead. You could easily sub pork in (or really any meat – ground beef meatballs would be good too).
I also found this recipe to have a lot of liquid in it, so that it ended up being more like a soup. If you want a stew I would make rice and spoon it over that. Delicious either way!
African Stew Recipe from the Mara
Ingredients:
- 4 cups water
- 3 chicken bouillon cubes
- 1/3 cup curry paste (or can be dry curry)
- 2 Tablespoons ground coriander, toasted
- 2 Tablespoons minced garlic
- 4 cups coconut light milk
- ¼ cup sugar
- 3 Tablespoons coconut aminos (can use low sodium soy sauce instead)
- 1 pound chicken, diced
- 1 pound shrimp
- 2 cups mixed red and green peppers, diced
- 2 cups onions, diced
- ½ cup whole kernel corn, frozen
- 1 bay leaf
- ¼ teaspoon cayenne pepper
- 2 Tablespoons cornstarch (make slurry)
Directions:
1. In a large pot, heat water, chiken bouillon cubes, curry paste, ground coriander, and garlic. Let boil and add in sugar and coconut milk.
2. Add in the coconut aminos and diced chicken. Let simmer for 15 minutes.
3. Add shrimp. Let simmer for 5 more minutes.
4. Add vegetables, spices, and cook until tender.
5. Bring to a boil and add cornstarch slurry slowly to the mixture and whisk until thickened.
6. Serve with rice or enjoy as a soup/stew on its own. Enjoy!
