You can actually find a s’mores cupcake in quite a few different places in Disney World. In the past you could find a massive one at Boardwalk Bakery (I think it’s seasonal) as well as at Sprinkles in Disney Springs. But one place where you can (almost) always find a s’mores cupcake is at Roaring Fork over at Wilderness Lodge. The s’mores cupcake recipe below is probably closest to that one.
For some reason I’ve always thought of s’mores as a fall or winter treat – I think that’s because when I was growing up we used to make fires for Thanksgiving and Christmas and would roast marshmallows on those holidays. As I got older I realized most other people consider it a summertime snack. I think it just goes to show that s’mores are great for any time of year!
Disney Family had shared a s’mores cupcake recipe, but I ended up adapting it a little bit. They used marshmallow fluff for the frosting, but I found that to be a sticky mess that did not brown well. I instead made a marshmallow frosting that I’ve shared below.
To get that delicious golden brown color on the top (or however you prefer your marshmallows!) a blowtorch is ideal. I don’t have one myself yet, so I did the broiling technique. Mine came out like this after about 2 minutes in the broiler, but your mileage may vary based on your broiler. I’d recommend testing one at a time first. I had a few burnt tops in my first round that I ended up scraping off!
Disney s’mores cupcake recipe:
Ingredients
- boxed chocolate cake mix
- 1/2 cup butter, melted
- 1 1/2 cups graham cracker crumbs
- 4 egg whites
- 1 cup granulated sugar
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1 teaspoon vanilla
Directions
- Preheat the oven to 350 degrees. Prepare the boxed cake mix and set aside.
- In a separate bowl, mix together graham cracker crumbs and melted butter until combined.
- Line a cupcake tray and press a spoonful of the graham cracker and butter mixture into each liner and cover the bottom.
- Pour the chocolate cake batter mix on top of the graham cracker base until cupcakes are 2/3 full.
- Bake for 14-16 minutes or until inserted toothpick comes out clean.
- Prepare the frosting: add the egg whites, granulated sugar, cream of tartar, and salt to a heat proof bowl. Set the bowl over a saucepan with a few inches of simmering water.
- Heat the mixture, whisking continually until warm and sugar has dissolved completely.
- Remove the bowl from heat and mix on high speed for about 7 minutes or until stiff peaks form. Add vanilla in last 10 seconds of mixing.
- Spread icing onto cupcakes. Use a blowtorch or place cupcakes in the broiler for 2 minutes to get the tops golden brown. If desired top with a piece of chocolate. Enjoy!
